Make sure to seek out unprocessed sources of fats such as pasture-raised animal fats, cold pressed olive oil, coconut oil and palm oil. These fats, as opposed to vegetable oils which burn at low temperatures and become toxic to us, are great to cook with as they can easily withstand the higher temperatures of cooking. Vegetable oil, with the exception of olive oil, are highly processed and unstable resulting in toxic overload to our bodies. Turns out our grandparents had it right when they cooked with animal fats!
